Carpaccio

Ingredients
- 8 thin slices of raw beef
- 2 tablespoons of drained capers
- 3 anchovies
- 4 sprigs fresh parsley, no stems
- 3 tablespoons olive oil
- 1 teaspoon worcestireshire sauce
- 1 dash, or more hot sauce
Directions
Note: Only prime beef such as filet mignon should be used, and all fat should be trimmed away. If you keep a filet strip in the freezer it is easy to slice very thin when frozen. Put all ingredients, except beef, in a blender for a couple of seconds to blend well. Spread a thin layer of sauce on a plate, lay beef slices on sauce. Serve with more sauce in a bowl, warm bread, a green salad, and a light red wine.
