Jumbo Shell Seafood Fancies
Serves 6
Ingredients
- 1 box large jumbo pasta shells
- 1 can lumb crabmeat, 8 ozs., drained
- 1 can tiny shrimp, 8 ozs., drained
- 1/2 cup mayonnaise
- 1 cup shredded swiss cheese
- 2 tablespoons thinly sliced celery
- 1 tablespoon finely chopped onions
- 1 tablespoon finely chopped pimientos
- celery leaves for garnish
Directions
Add the shells gradually to 6 quarts of boiling salted boiling
water and cook until tender, but firm. Drain and rinse with cold
water and drain again. Set aside unside down to drain and cool.
Combine the rest of the ingredients in a bowl and mix gently. If
mixture seems to dry, add a little more mayonnaise. Spoon this
mixture into the shells and refrigerator. Garnish with celery
leaves.
