Corn Relish
Ingredients
- 1 1/2 cups sugar
- 2 cups diced onions
- 2 cups water
- 1 1/2 cups white vinegar, 5 % acidity
- 10 1/2 cups corn, fresh or frozen
- 1 package Ball 100% Corn Relish Mix
Prepare home canning jars and lids according to manufactures
directions. Combine sugar, onions, water, vinegar and corn relish
mix. Bring to a boil. Add corn and simmer for 5 minutes. Pack
relish into hot jars leaving 1/4 inch head space. Wipe rim clean.
Place on lid and screw band down evenly and firmly. Do Not use
excessive force. Process 15 minutes in a boiling water bath
canner.
Yield; About 7 pints.
