Peach Preserves
Ingredients
- 4 pounds ripe peaches
- 2 tablespoons lemon juice
- 1 package powdered pectin
- 7 cups sugar
Peel and pit peaches, then thinly slice, about 4 cups sliced.
Combine peaches, lemon juice and pectin in a large saucepot. Stir
in sugar and bring to a full rolling boil. Boil hard for 1
minute, stirring constantly. Remove from heat and skim off foam.
Pour, hot, into hot jars, leaving 1/4 inch head space. Adjust
caps. Process 10 minutes in boiling water bath.
Yield: about six 12 ounce jars
