Sweet Pickle Relish

Ingredients

Prepare home canning jars and lids according to manufactures directions. Combine cucumbers and onions in a bowl. Sprinkle with salt; cover with water and let stand for 2 hours. Drain and press out liquid. Combine sugar, vinegar, 1 cup of water and relish mix. Bring to a boil. Add cucumbers and onions; simmer for 10 minutes. Pack relish into hot jars, leaving 1/4 inch head space. Wipe jar rim clean. Place on lid; screw band down firmly and evenly. Do not use excessive force. Process 10 minutes in a boiling water bath canner.

Yield; About 7 pints
