Sweet Pickles
Ingredients
- 4 pounds small pickling cucumbers
- 4 cups sugar
- 3 3/4 cups white vinegar
- 3 tablespoons pickling salt
- 4 teaspoons celery seed
- 4 teaspoons turmeric
- 1 1/2 teaspoons mustard seed
Wash and drain cucumbers. Cut cucumbers into spears. Pour
boiling water over cucumbers and let stand 2 hours. Drain and
pack into hot 11/2 pint jars leaving 1/4 head space. Heat
remaining ingredients to a boil. Pour boiling liquid over cukes
leaving 1/4 inch head space. Remove any air bubbles. Adjust caps
and process 10 minutes in a boiling water bath canner.
Yield; About 10 half pints.
