Bread & Butter Pickles
Ingredients
- 10 to 12 pounds 4-6 inch pickling cucumbers
- 8 cups white vinegar
- 6 cups sugar
- 3 cups sliced onions
- 1 package Ball 100% Bread & Butter Pickle Mix
Prepare home canning jars and lids according to manufactures
directions. Thoroughly wash and clean cucumbers. Trim at least
1/16 inch off each eand. Drain. Cut cucumbers into 1/4 inch
slices. Mix cukes and onions to mix. Combine vinegar, sugar and
pickle mix. Bring to a boil and remove from heat. Pack cucumbers
and onions into hot jars leaving 1/4 inch head space. Ladle
pickling mixture into jars leaving 1/4 inch head space. Remove
air bubbles with a non metallic spatula. Wipe jar rim. Place on
lid and screw band down firmly and evenly. Do not use excessive
force. Process 15 minutes in a boling water bath canner.
Yield; About 7 quarts
