Beef Nacho Casserole
Serves 4
Ingredients
- 1 pound ground beef
- 1 cup frozen corn, thawed and drained
- 2 cups crushed tortilla chips, divided
- 2 cups Monterey Jack cheese, shredded
- 12 ozs. salsa
- 3/4 cup mayonnaise
- 1 tablespoon chili powder
Directions
Heat oven to 350F degrees. Brown meat; drain. Stir in salsa, corn,
dressing and chili powder. Layer 1/2 each of meat mixture, chips
and cheese in 2 quart casserole. Repeat layers. Bake 20 minutes
or until thoroughly heated. Top with shredded lettuce and chopped
tomatoes if desired.
