Asparagus Jim
Serves 4
Ingredients
- 3 tablespoons olive oil
- 1/2 pound asparagus, cut diagonally
- 1 medium onion, chopped
- 1 garlic clove minced
- 1/2 pound sliced mushrooms
- 1 pound ground beef
- 1/2 teaspoon oregano
- 1 dash hot pepper sauce, or more if desired
- salt and pepper to taste
- 4 eggs, slightly beaten
- grated parmesan cheese
Directions
Heat 1 tablespoon of oil in skillet. Stir fry asparagus until almost
crisp-tender remove and set aside. Add remaining oil to skillet. Saute onion, garlic and mushrooms until barely tender.
Crumble in beef, cook until meat looses red color. Stir in asparagus,
seasonings and reduce heat. Pour in eggs and stir gently until eggs
are set. Sprinkle with parmesan cheese.
