Chopped Steak Au Poivre
Serves 4
Ingredients
- 1 1/2 pounds ground beef
- 2 tablespoons ground black pepper
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/3 cup finely chopped shallots
- 1/4 cup brandy
- 1/2 cup beef broth
- 1/4 cup heavy cream
- 2 tablespoons chopped parsley
Directions
Shape beef into four 3/4-inch-thick oval patties. Coat both
sides evenly with pepper; sprinkle lightly with salt. Heat
oil in large skillet over medium-high heat. Add beef and
cook 3 to 4 minutes per side for medium-rare. Transfer beef
to serving platter; cover and keep warm. Discard any drippings
from skillet. Add butter and melt over medium-high heat. Add
shallots and cook until softened, 1 minute. Add brandy and
carefully ignite, shaking pan constantly until flame dies down.
Pour in broth and boil 3 minutes. Stir in cream and boil until
sauce is thickened, 1 minute more. Stir in parsley. Pour sauce
over beef. Serve immediately.
