Ground Beef & Bean Casserole
Serves 4
Ingredients
- 6 slices of bacon
- 1 1/2 pounds ground beef
- 1 can red kidney beans, 20 ozs.
- 1 can white kidney beans, 20 ozs.
- 1 can stewed tomatoes, 16 oz.
- 1/4 cup chopped parsley
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
Directions
In a skillet brown ground beef. Discard the drippings. Drain the beans in a collander and rinse
with cold water. Add to meat together with the tomatoes, parsley
and seasonings. Gently stir to blend. Place mixture in a
casserole baking dish and place bacon on top. Cover and bake in a
350 degree oven for 45 minutes.
