Beef & Rice Casserole
Serves 4
Ingredients
- 1 green bell pepper, chopped
- 1 small onion chopped
- 2 tablespoons butter
- 1 pound ground beef
- 14 oz. can whole tomatoes
- 6 oz. can tomato sauce
- 1 cup minute rice
- 1/2 teaspoon garlic powder
- salt and pepper to taste
Directions
Saute green pepper and onion in butter for about 3 minutes.
Remove and set aside. In same skillet brown beef. Drain off
excess fat. add peppers and onion to beef in skillet. Add
tomatoes, breaking them up with your hands. Stir in remaining
ingredients. Cover and simmer for about 25 minutes until rice is
tender and liquid is absorbed. You may add a few drops of hot
sauce at this point.
