Beef & 3 Bean Casserole
Serves 4
Ingredients
- 1/2 pound bacon
- 1 pound ground beef
- 1 medium onion chopped
- 14 oz. can lima beans, drained
- 14 oz. can kidney beans, undrained
- 14 oz. can pork and beans, undrained
- 2 tablespoons dry mustard
- 1/2 cup brown sugar
- salt and pepper to taste
Directions
Preheat oven to 350 degrees. In a skillet saute bacon until brown. Remove to paper towels and crumble. Drain all but 2 tablespoons of bacon fat. In the same skillet, crumble ground beef and cook over medium heat for about 5 minutes. Add onion and continue sauteing until beef is browned. Drain excess fat. In a 4 quart casserole, mix together all ingredients. Mix well. Cover and bake in oven for about 30 minutes, until bubbly.
