Country Style Potatoes

Ingredients
- 1 tablespoons olive oil
- 1/4 pound sliced mushrooms
- 1/2 cup chopped onions
- 1/2 cup chicken stock or water
- 3 medium potatoes sliced 1/4 inch thick
- 2 tablespoons chopped parsley
- salt and pepper to taste
In the cooker, heat oil and saute the mushrooms and onions until the onions are wilted. Mix in all other ingredients. Close lid and bring up to pressure. Process for 3 minutes. Release pressure by the cold water method. Serve
