French Onion Soup

Ingredients
- 5 medium onions sliced thinly
- 4 tablespoons butter
- 6 cups beef broth
- 1/4 teaspoon black pepper
- 2 tablespoons dry white wine
- 6 slices french bread lightly toasted
- 1/2 cup mozzarella cheese, shredded
Melt butter in the cooker, add onions slices and cook very slowly for about 20 minutes until golden. Add the stock, pepper, and wine. Close lid and bring up to pressure. Process for 15 minutes. Release pressure by the cold water method, remove lid. Serve in soup bowls with a slice of toasted bread on top and sprinkle with mozzarella. Place under broiler to melt cheese.
