Jim's Country Pot Roast

Ingredients
- 3 pounds chuck roast
- 1 envelope lipton's onion soup mix
- 2 1/2 cups water
- 1 teaspoon dried thyme
- 1 tablespoon ground black pepper
- 4 medium potatoes, peeled and quartered
- 4 medium carrots, peeled and sliced
- 4 celery stalks sliced into chunks
- 1 large onion peeled and quartered
- 1 cup of sliced mushrooms
Rub roast with olive oil and coat with black pepper. Heat about 2 tablespoons of olive oil in cooker and brown roast on all sides. Remove and set aside. Deglase pan by adding 2 1/2 cups water. Add onion soup mix and blend well. Return roast to cooker. Close lid and bring up to pressue. Process for 60 minutes. Let pressure drop naturally. Remove roast to warm platter. Add vegetables to cooker. Close lid and bring up to pressure. Process for 5 minutes. Reduce pressure by cold water method. Thickened sauce with cornstarch and water.
