Spicy Chili

Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 1/2 pounds ground beef
- 2 teaspoons ground cumin
- 2 tablespoons chili powder, or more to taste
- 1 1/2 teaspoons oregano
- 1 whole bay leaf
- 2 teaspoons celery seed
- salt and pepper to taste
- 1 tablespoon flour
- 1 1/2 cups crushed tomatoes
- 1 cup beef stock
- 1 1/2 cups red kidney beans, cooked or canned
Heat the oil in the cooker and saute onion and garlic until onion is welted. Add beef and saute until browned. Mix in the cumin, chili powder, oregano, bay leaf, celery seed, salt, pepper, and flour. Stir in crushed tomatoes and beef stock. Close lid and bring up to pressure. Process for 15 minutes. Release pressure, remove lid and add beans. Cook uncovered for 5 minutes. Serve and garnish with your favorite cheese, or chopped onion, or shredded lettuce.
