Chicken A LA Lee

Ingredients
- 1 tablespoon oil
- 3 pounds chicken -- cut into pieces
- salt and pepper -- to taste
- 1/2 teaspoon paprika
- 1/2 teaspoon marjoram
- 1/2 cup duck sauce
- 1/4 cup white wine
- 1/4 cup chicken stock -- or water
NOTE: You can make a great duck sauce by combining apricot
preserves, white vinegar, honey, and crushed hot red pepper
to taste. Heat oil in cooker and brown chicken on all sides.
Remove to a warm platter and sprinkle with sat, pepper, and
majoram. Pour off fat. Add wine, chicken stock, and arrange
chicken on top. Brush with duck sauce. Close lid and bring
up to pressure. Process for 8 minutes. Reduce pressure and
remove lid. Remove chicken to platter and boil down the sauce
until it is thick and syrupy. Spoon over chicken.
