Sweet & Sour Chicken

Ingredients

Heat oil and brown chicken a few pieces at a time an set aside. Return all chicken to cooker; add celery and green pepper. Combine pineapple juice (1 cup, add water if necessary), brown sugar, vinegar, soy sauce, ketchup, worcestershire, and ginger. Pour over chicken. Close cooker and bring up to pressure. Process for 8 minutes. Reduce pressure by cold water method. Remove chicken and vegetables to a warm platter. Mix cornstarch and water and add to hot liquid and stir until sauce thickens. Add pinepple chunks and heat. Pour sauce over chicken. I serve this with rice or Rice-a-Roni.
