Coq Au Vin

Ingredients
- 2 pounds chicken parts
- flour for dusting
- 2 tablespoons olive oil
- 3 slices bacon, chopped
- 1 large onion, chopped
- 2 cloves minced garlic
- 1 medium carrot, diced
- 1 tablespoon flour
- 1 cup red wine
- 1/2 teaspoon thyme
- 2 tabespoons chopped parsley
- 1 whole bay leaf
- 1/2 pound sliced fresh mushrooms
- salt and pepper to taste
Dust the chicken parts with flour. Heat oil in cooker and brown chicken on all sides. Remove chicken. Add to the cooker the bacon, onion, garlic, carrot, and saute until onion is wilted. Stir in 1 tablespoon of flour, then gradually add the wine and stir until thickened and smooth. Add thyme, parsley, bay leaf, salt and pepper, then return chicken to cooker. Close lid and bring up to pressure. Process for 8 minutes. Release pressure, remove lid and add mushrooms and simmer, uncovered for 3 minutes. Discard bay leaf.
