Cauliflower & Broccoli Salad
Ingredients
- 1 cauliflower head, cut into 1 inch pieces
- 1 broccoli, cut into 1 inch pieces
- Creamy Garlic Dressing
- 4 cloves garlic
- 1 egg
- 1 tablespoon dijon mustard
- 3/4 cup olive oil
- 1 tablespoon lemon juice
- 1 tablespoon white vinegar
- 1 teaspoon kosher salt
- 1/8 teaspoon white pepper
Directions
To prepare salad, place florets in basket over boiling water. Steam until a knife inserted will easily pierce vegetable (6 to 8 minutes). Remove from steamer and cool. To prepare Creamy Garlic Dressing, drop a garlic in a food processor and puree. Add egg and mustard. With machine still running, add oil in a thin stream until mixture is slightly thickened. Season with lemon juice, vinegar, salt, and pepper. Toss salad mixture with dressing and serve.
