Chicken Liver Pate
Serves 4
Ingredients
- 1 pound chicken livers, 1 container at meat counter
- 1 cup chicken broth
- 1 hard boiled egg
- 1/2 cup chopped onions
- 1 crushed garlic clove
- 2 tablespoons butter
- 1/2 teaspoon dry mustard
- 1 tablespoon parsley flakes
- salt and pepper to taste
Directions
Simmer the livers in chicken broth until done, 8 to 10
minutes. Drain. Grind them with the egg, using a medium blade of
a food chopper. Or, puree in an electric blender, using a little
of the liquid in which the livers were cooked. Brown the onions
lightly in butter. Add onions and butter and all other ingredients
to livers to make a paste. Serve in a lettuce cup with melba
toast.
