Chicken Livers Marsala
Serves 4
Ingredients
- 1 pound chicken livers, 1 container at meat counter
- 1/2 onion, sliced into strips
- 1/2 teaspoon dry sage
- 4 tablespoons butter
- 2 slices bacon
- 1/4 cup Marsala wine
- salt and pepper to taste
- toast triangles
Directions
Trim livers and cut in half. Season with salt, pepper and
sage. Heat butter in a skillet, add diced bacon, onion and saute
until onion is translucent, about 3 minutes. Add livers and cook
over medium heat for 3 to 4 minutes, turning them a few times.
When browned, remove them to a hot plate. Add wine to skillet,
stir well to deglaze pan and simmer the sauce for 2 minutes.
Arrange livers on toast points and pour sauce over them.
