Pickled Mushrooms
Serves 6
Ingredients
- 2/3 cup tarragon vinegar
- 1/2 cup vegetable oil
- 2 tablespoons water
- 1 tablespoon sugar
- 2 teaspoons salt
- 1 clove garlic, minced
- 2 dashes hot pepper sauce
- 1 pound fresh mushrooms
- 1 onion, thinly sliced into rings
- 1/3 cup red bell pepper, diced for garnish
Directions
In a glass bowl, combine the first 7 ingredients. Mix well.
Add mushrooms and onion. Toss to coat. Cover and refrigerate for
8 hours or overnite. Sprinkle with diced red bell pepper before
serving.
