Ingredients
- 10 Jalapeno peppers, 2-3 inches long
- 1 cup beer
- 1 cup flour
- 8 ozs. cream cheese, softened
Directions
Cut each pepper in half lengthwise. Remove seeds and membranes. When removing the stem, be sure to leave tops intact as to form a bowl. Parboil peppers by dropping them into salted boiling water and simmer for about 5 minutes. Remove from water and drain on paper towels. Cool. Spoon some of the cheese mixture into each pepper half. Beat together beer and flour in a small mixing bowl. Dip each pepper into beer batter and set aside on wax paper. Deep fry at 375 degrees until they float and are golden brown. Cool a little before eating.
