Green Pepper Steak
Serves 4
Ingredients
- 1 pound beef chuck
- 1/4 cup soy sauce
- 1 clove garlic, minced
- 1/2 teaspoon ground ginger
- 1/4 cup salad oil
- 1 cup green onion, thinly sliced
- 1 cup sliced bell pepper
- 2 stalks celery, sliced
- 1 tablespoon cornstarch
- 1 cup water
- 2 whole tomatoes, cut into wedges
Directions
With a sharp knife, cut beef across the grain into thin strips, 1/8 inch. Combine soy sauce, garlic, and ginger. Add beef and toss to coat and set aside for 15 minutes. Heat oil in a large frying pan. Add beef and toss over high heat until browned. Taste beef and if it is not tender, cover and simmer for 30 minutes over low heat. Turn heat up and add vegetables. Toss until vegetables are crisp tender, about 10 minutes. Mix cornstarch with water and add to mixture. Stir until thickened. Add tomatoes and heat through.
