Beef Tenderloin with Horseradish Crust
Serves 6
Ingredients
- 3 pounds beef tenderloin
- 1 tablespoon olive oil
- salt and pepper
- 2 tablespoons dijon mustard
- 1 1/2 cups grated horseradish
- 1/2 teaspoon ground black pepper
- 2 teaspoons chopped garlic
- 1/2 teaspoon salt
- 2 cups worcestershire sauce
- 2 tablespoons chopped parsley
Directions
Preheat oven to 400 degrees. Rub the beef with olive oil and salt and pepper. Heat a skillet large enough to hold the beef and sear the beef on all sides until browned evenly. Line a shallow pan fitted with a wire rack and aluminum foil. Place beef on rack. Rub the top and sides with mustard. Combine the horseradish, black pepper, garlic and salt in a small mixing bowl. Using your hands, press this mixture evenly over the top and sides of the beef. Roast for about 30 minutes for rare or 35 minutes for medium rare. Remove from oven and let rest for about 5 minutes before slicing. Drizzle beef slices with worcestershire and garnish with chopped parsley.
