Brandied Beef Stew
Serves 4
Ingredients
- 2 pounds stew meat
- 2 tablespoons flour
- 1 teaspoon garlic salt
- 1/2 teaspoon oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon ground black pepper
- 2 tablespoons olive oil
- 1 onion, cut into wedges
- 3 carrots, cut into 1 inch pieces
- 14 ounces beef stock
- 1/2 cup brandy
- 2 cups small button mushrooms
- 2 tablespoons chopped parsley
Directions
Sprinkle meat with flour, garlic salt, oregano, basil and pepper. Toss to coat. Heat oil in a dutch oven or large pot with lid. Add meat and cook over medium heat until brown on all sides, stirring occasionally. Add onions, carrot, beef broth and brandy. Cover and simmer over low heat for 1 1/2 hours or until meat is very tender. Add mushrooms and chopped parsley. Simmer 10 minutes more.
