Cuban Plum Glazed Pork
Ingredients
- 1 cup red plum jam
- 1/2 cup dry white wine
- 2 tsp chopped fresh rosemary
- 2 tsp brown sugar
- 1/2 tsp salt
- 1 1/2 lbs boneless pork tenderloin
Directions
Preheat oven to 325F. Place pork, fat-side up, on rack in shallow roasting pan. Season with salt and pepper. Bake for 1 hour. Meanwhile, in small saucepan combine all sauce ingredients. cook over medium heat until mixture comes to a boil. Continue cooking until slightly thickened, about 2-3 minutes. Reserve sauce; keep warm. Spoon 1/4 cup sauce over pork. Continue baking, basting occasionally, until temperature reaches 165F on a meat thermometer. Slice pork and serve with reserved sauce.
