Apricot Pork
Ingredients
- 1 1/2 lbs boneless pork, in strips
- 2 Tbs oil
- 2 cups celery, sliced
- 1/2 cup scallions, sliced
- 2 cloves garlic, minced
- 1/3 cup soy sauce
- 1/2 tsp ground ginger
- 8 oz sliced waterchestnuts, drained
- 30 oz apricot halves, drained
- salt and pepper, to taste
- hot cooked rice
Directions
Heat oil in wok. Stir fry celery, scallions, and garlic in hot oil until tender; remove vegetables and set aside. Add pork to wok and stir fry over high heat until lightly browned. Stir in soy sauce and ginger. Reduce heat to medium; return vegetables to wok. Add water chestnuts; heat until hot, stirring constantly. Gently stir in apricot halves. Remove from heat. Season with salt and pepper. Serve with rice.
