Parmesan Pork Tenderloin
Ingredients
- 1 lb pork tenderloin
- 3 Tbs seasoned bread crumbs
- 1 Tbs grated parmesan cheese
- 1 tsp salt
- 1/8 tsp pepper
- 2 tsp vegetable oil
- 1 small onion, chopped
- 1 clove garlic, minced
Directions
Cut tenderloin crosswise into 8 slices, about 1 inch thick. Place each slice on its cut surface and flatten to 1/2-inch thickness. Combine bread crumbs, Parmesan cheese, salt and pepper; dredge pork slices to coat. Heat oil in large, heavy non-stick skillet over medium-low heat. Add pork and distribute onions and garlic around meat. Cook slowly 5 minutes; turn and cook slowly 4-5 minutes more until done.
