Autumn Pasta
Serves 4
Ingredients
- 2 cups cheese tortellini, cooked and drained
- 16 oz bag frozen broccoli, corn, and red peppers, cooked and drained
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 tablespoon lemon juice
- 1 tablespoon red pepper flakes, optional
- 12 oz's diced tomatoes
- chopped parsley and parmesan for garnish
Directions
Cook tortellini and frozen vegetables according to package directions and drain. In a small bowl combine olive oil, lemon juice, salt, pepper, and pepper flakes and mix well. Add canned diced tomatoes and stir well. In a saucepan, combine pasta, vegetables, and tomato mixture. Cook over medium heat for about 5 minutes until heated through. Garnish with parsley and parmesan cheese.
