Fresh Greens with Pasta
Serves 6
Ingredients
- 1 pound mixed greens
- 2 cloves minced garlic
- 1/4 cup butter or margarine
- 1/2 cup grated parmesan cheese
- salt and pepper to taste
- 1 pound pasta
Directions
Other pasta may be substituted for linguine. Clean and stem greens, removing tough ribs. Cut greens into 1/2 inch strips and dry well. Saute greens and garlic in margarine over low heat. Cover and cook until greens are wilted, about 1 minute. Toss cooked pasta with greens. Season with salt, pepper and parmesan cheese.
