Light Summer Pasta
Serves 4
Ingredients
- 16 ozs. linguine
- 6 medium fresh tomatoes, chopped
- 1 pound shredded mozzarella cheese
- 1/3 cup chopped fresh basil
- 6 cloves minced garlic
- 1/2 cup olive oil
- 1/4 teaspoon salt
- fresh black pepper to taste
Directions
Cook pasta according to package directions. Combine all
ingredients except pasta and let sit at room temperature.
Toss with hot cooked pasta.
