Rice Pilaf

Ingredients
- 2 tablespoons butter
- 2 tablespoons minced onion
- 1 cup rice
- 2 cups chicken broth
- 2 tablespoons pine nuts
- 2 tablespoons raisins
- 1 teaspoon dried thyme
- 1 tablespoon minced parsley
- salt and pepper to taste
Melt butter in cooker and saute the onion until softened. Add rice and stir to coat with butter. Add the remaining ingredients and bring to a boil. Close lid and bring up to pressure. Process for 3 minutes. Release pressure by the cold water method. Remove lid and drain off any excess liquid. Dry in oven before serving.
