Maryland Crab Cakes

Serves 4

Original recipe name is Maryland Lady Crab Cakes.


Ingredients

  • 1 pound crab meat
  • 1 cup Italian bread crumbs
  • 1 whole egg, or 2 small
  • 1/4 cup mayonnaise
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • shortening, for frying

    Remove all cartilage from crab meat. In a bowl, mix bread crumbs, egg, mayonnaise and seasonings. Add crabmeat and mix GENTLY but thoroughly. If mixture is too dry, add a little more mayonnaise. Shape into 6 cakes. Place cakes in freezer for 30 minutes. Cook cakes in frying pan, in just enough fat to prevent sticking, until browned; about 5 minutes each side. If desired, crab cakes can be deep fried in 350 degree oil, for about 3 to 3 minutes.
