Baked White Fish
Serves 2
Ingredients
- 8 ounces whitefish, 4 ounces per person
- 1/4 cup olive oil
- 2 stalks celery or fennel
- 1/2 yellow onion
- 1 tomato
- 1/4 cup grated Parmesan Cheese
- 1/2 cup white wine
- Sea salt
- ground black pepper
- 1 lemon quarted
Directions
Preheat oven to 400°F. Lay fish in an oven dish and dribble oil over fish. With a chef's knife coarsely chop celery and onion and place both around fish in dish. Slice tomato into dish over fish; sprinkle cheese over fish and vegetables. Place dish in preheated oven and cook 5 minutes. Pour wine into bottom of dish and baste fish; season to taste. Return dish to oven, cook 5-6 minutes, and baste again. Fish should flake when done. Garnish with quartered lemon and serve.
