Bluefish Pasta Salad
Serves 4
Ingredients
- 1 pound bluefish, cooked
- 2 cloves garlic, minced
- 3 tablespoons fresh cilanto, chopped
- 1 jalapeno pepper, seeded and minced
- 2 tablespoons red wine vinegar
- 6 tablespoons olive oil
- 1/2 pound pasta, cooked and drained
- salt and pepper to taste
- 4 romaine lettuce leaves
- fresh cilantro, chopped for garnish
Directions
Corkscrew pasta makes a nice presentation. Cut fish or seafood into bite-sized pieces, removing any bones from fish. Thoroughly blend next 5 ingredients for the dressing. Toss fish and pasta with dressing. Season with salt and pepper. On each of 4 individual plates, place a large leaf of lettuce. Fill each leaf with salad. Sprinkle with cilantro. Note: You can use cooked weakfish in place of blue fish.
