Carrot and Raisin Salad
Ingredients
- 4 large carrots
- 1/2 cup raisins
- 1/2 teaspoon salt
- 1 tablespoon lemon juice
- 1 cup sour cream, mayonnaise or yogurt, or any combination
- 1/3 cup chopped pecans, almonds, or peanuts
Directions
Clean carrots, cover with ice in a bowl and refrigerate for 1/2 hour. Grate carrots into a bowl and add raisins, (nuts if desired) lemon juice and sour cream. Mix well and serve on a lettuce leaf. Note: If using sour cream or yogurt, you may prefer a sprinkling of sugar into the mix.
