Cold Beef Salad
Ingredients
- 1/2 cup heavy cream
- 1 lemon or more if needed
- 2 tablespoons Dijon mustard
- fresh ground black pepper
- 4 thin slices of roast beef cooked rare
- 1/2 cup Gruyere cheese
- 1/2 head romaine lettuce, cut lengthwise
Directions
Pour cream into a salad bowl and squeeze in juice of 1 lemon; stir in mustard and season to taste with pepper. (Dressing should be thin; if necessary, add more lemon juice). With a sharp knife cut beef into long, thin strips and add to bowl with cheese; toss with dressing to mix well. With chef's knife cut lettuce in half crosswise and put into bowl; toss carefully to combine ingredients.
