Cabbage Salad
Ingredients
- 1 1/2 pounds green or savoy cabbage, 1 medium head, finely shredded
- 1 medium onion, grated
- 2 tablespoons chopped fresh parsley
- 1/3 cup olive oil
- 3 tablespoons wine vinegar
- 1 teaspoon sugar
- salt and pepper to taste
- 1 green bell pepper, cut into thin rings
Directions
In a large salad bowl, combine cabbage, onion, and parsley. In a small bowl whisk together oil, vinegar, sugar, salt, and ground pepper. Pour dressing over cabbage and toss until thoroughly coated. Arrange bell pepper rings on top. Cover and chill before serving.
