Cremini Mushroom Sauce
Ingredients
- 2 tablespoons butter
- 1 medium shallot, minced
- 1 clove garlic, minced
- 1/2 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
- 1/2 package cremini mushrooms, sliced thin
- 1/4 cup beef stock or canned beef broth
- 1/4 cup dry white wine
- salt and pepper to taste
Directions
For the sauce, heat butter in a medium skillet. Add shallots, garlic, and thyme; sauté until fragrant, about 30 seconds. Add mushrooms; sauté until lightly browned, about 3 minutes. Add beef stock and wine; bring to boil and simmer to blend flavors, about 5 minutes. Season with 1/4 teaspoon salt and 1/4 teaspoon pepper or to taste; cover and keep sauce warm. Spoon a portion of Cremini Mushroom Sauce over each steak, chicken or fish and serve. A rich, winey condensed mushroom sauce, ideal for smoked meats. If cremini mushrooms are unavailable, substitute other wild or domestic mushrooms.
