Cucumber Sauce
Ingredients
- 3 medium cucumbers, peeded and seeded
- 1 teaspoon salt
- 1 1/2 cups sour cream
- 1 tablespoon fresh dill weed, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
Directions
Grate cucumber and sprinkle with salt. Allow to drain in a colander for 1/2 hour. Press remaining moisture out of cucumbers and fold into cream mixture and herbs. Excellent with fish.
