Grapefruit Vinaigrette
Ingredients
- 1/2 cup fresh grapefruit
- 7 tablespoons balsamic vinegar
- 1/3 cup peanut oil or vegetable oil
- 2 1/2 tablespoons sesame oil
- 2 tablespoons Dijon mustard
Directions
In a small bowl whisk together grapefruit juice, vinegar, peanut oil, sesame oil, and mustard. Chill slightly. Pour dressing over salad and toss to coat. Makes 1-1/2 cups. Dressing can be made up to 1 week ahead and stored, covered, in refrigerator.
Note: The mild balsamic vinegar makes a difference. Rice wine vinegar and cider vinegar are suitable alternatives; if you must use wine vinegar, decrease the amount to taste.
