In a small bowl, combine all except for olive oil. Whisk in oil and let stand 5 minutes. Whisk again, then taste and adjust seasoning. Makes 1 cup. Vinaigrette is the traditional French salad dressing. Blends of oil (usually olive, safflower, peanut or walnut) and wine vinegar, with minced herbs added to taste, vinaigrettes dress everything from simple lettuce salads to elaborate combinations of meats and vegetables. Some cooks add a touch of creme to their vinaigrette, but creamy dressings in the American style are rare in France. Leftover vinaigrette may be store at room temperature for up to a day or refrigerated in an airtight jar for up to three days. Whisk, taste, and adjust seasoning before using.
