Carrots and Snow Peas
Serves 4
Ingredients
- 1 tablespoon margarine
- 3 carrots, thinly sliced diagonally
- 1/2 pound snow peas
- 2 tablespoons sugar
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh mint leaves
Directions
In a large non-stick skillet, melt margarine over medium heat. Saute carrots 3 to 4 minutes. Add snow peas, sugar, lemon juice and mint; continue to saute 1 to 2 more minutes until vegetables are glazed crisp-tender. Note: One teaspoon of dried mint may be substituted for fresh.
