Carrots with Tarragon
Serves 4
Ingredients
- 4 large carrots
- 1 tablespoon butter or margarine
- 1 teaspoon fresh ginger root, grated
- 1 teaspoon lemon juice
- 1 teaspoon fresh chopped tarragon
Directions
Fresh coriander may be substituted for the tarragon if you prefer. Peel and trim carrots. Cut into diagonal slices about 2 inches long. Steam carrots until just tender, about 10-11 minutes. In a large bowl, combine butter, ginger, lemon juice and tarragon. Add carrots and toss to coat. Serve immediately.
