Carrots Broccoli and Rice
Serves 4
Ingredients
- 1 cup cooked rice
- 1 package frozen broccoli, 10 ozs.
- 2 whole carrots, peeled and sliced
- 1 tablespoon butter or margarine
- 2 tablespoons olive oil
- 2 cloves minced garlic
- 1/2 cup parmesan cheese
- 1/2 teaspoon ground black pepper
Directions
Cook broccoli and carrots in 1/2 cup salted boiling water for about 5 minutes or until crisp tender. Drain. In a sauce pan heat butter, oil, and garlic until hot. In a bowl, combine vegetables with cooked rice. Add butter mixture and toss to coat. Sprinkle top with parmesan cheese and fresh cracked pepper.
