Baked Corn with Cheese Topping
Serves 4
Ingredients
- 2 cans corn, 16 oz.
- 1 bunch green onions, sliced
- 2 tablespoons butter or margarine
- 2 tablespoons brown sugar
- 1 cup sour cream
- 1 tablespoon dijon mustard
- 1 dash ground black pepper
- 1/2 cup cheddar cheese, grated
- 2 tablespoons parmesan cheese
Drain both cans of corn. Place in a shallow 9 inch baking dish. Saute green onion in butter until soft. Scatter onions over corn. Sprinkle with brown sugar. In a small bowl combine sour cream, mustard, black pepper and cheddar cheese. Mix well and spoon over corn. Sprinkle top with grated parmesan cheese. Bake, covered at 375 degrees for about 20 minutes. Uncover and bake for another 10 to 15 minutes or until top is slightly browned. Serve with baked ham, pork chops, or meatloaf.
