Fried Chicken New Orleans

Ingredients
- 1/2 cup flour
- 1 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1 1/2 pounds frying chicken -- cut up
- 1 whole egg -- beaten
- 2 tablespoons water
- 1 cup stuffing cubes -- crushed
- 1/2 cup shortening
Combine four, salt, and cayenne pepper in a bag.
Shake chicken in bag until well coated. Crush stuffing
mix with a rolling pin. Combine egg and water in a bowl.
Dip floured chicken into egg, then roll in crushed stuffing.
Saute chicken in hot shortening until golden brown on all
sides. Lower heat and cook 20 to 40 minutes uncovered.
Drain on paper towels.
